Tandoori Chicken Masala
Ingredients
30ml / 6 tsp cumin seeds, coriander seeds and cinnamon stick
15 ml / 3 tsp cloves, chillie powder, ginger powder, turmeric, garlic powder, mace powder, salt
1 tsp red food colouring.
Method
Dry roast all the whole spices until they smoke but not burn.
Cool and grind with the powdered spices and salt.
Add food colouring. Bottle.
*Use as required adding a few tbsp mixed with yoghurt to marinate chicken, making a delicious tandoori chicken meal.
Add few spoons to marinades for an unusual taste and colour.
Add with mayonnaise for a delicious dip.
A little added to curries can change the whole appearance.
